He’s worked in some remarkable kitchens — El Celler de Can Roca, The French Laundry, Marcus in London — and most recently served as Executive Chef at Estela, where he focused on bold, seasonal dishes with global influence.

With experience in both luxury hotels, including the Luxury Collection and Four Seasons, and New York restaurants like Craft, Altro Paradiso, and most recently opening Brass and The Tusk Bar in NoMad, Alexis brings a unique blend of refined service and personal warmth to every guest interaction.
